Canning Tangerines

Canning is a great way to preserve tangerines and keep them fresh for an extended period.

Ingredients:

  • Fresh tangerines
  • Water
  • Sugar (optional)
  • Lemon juice (optional)

Instructions:

  1. Prepare the Tangerines:
    • Peel the tangerines and remove the white pith.
    • Separate the segments and remove any seeds.
  2. Make a Syrup (Optional):
    • In a large pot, combine water and sugar (to taste). Bring to a boil and then reduce to a simmer until the sugar dissolves.
    • Add a bit of lemon juice to the syrup to preserve the color and flavor of the tangerines.
  3. Pack the Jars:
    • Sterilize canning jars and lids.
    • Pack the tangerine segments tightly into the jars, leaving about 1/2 inch of headspace at the top.
  4. Add Syrup:
    • Pour the hot syrup over the tangerines, leaving 1/2 inch of headspace.
  5. Remove Air Bubbles:
    • Use a non-metallic utensil to remove any air bubbles by running it around the inside of the jar.
  6. Seal the Jars:
    • Wipe the rims of the jars with a clean cloth.
    • Place the lids on and screw on the bands until fingertip tight.
  7. Process the Jars:
    • Place the jars in a water bath canner, making sure they are completely covered with water.
    • Bring to a boil and process for about 10-15 minutes.
  8. Cool and Store:
    • Carefully remove the jars and let them cool.
    • Check the seals and store in a cool, dark place.

Freezing Tangerines

Freezing is another effective method to keep tangerines fresh.

Instructions:

  1. Prepare the Tangerines:
    • Peel the tangerines and separate the segments.
    • Remove any seeds and white pith.
  2. Flash Freeze:
    • Place the tangerine segments on a baking sheet in a single layer.
    • Freeze for a few hours until solid.
  3. Store:
    • Transfer the frozen segments to airtight freezer bags or containers.
    • Label with the date and store in the freezer.

Dehydrating Tangerines

Dehydrating tangerines can extend their shelf life and provide a healthy snack option.

Instructions:

  1. Prepare the Tangerines:
    • Peel the tangerines and slice them into thin rounds.
  2. Dehydrate:
    • Place the slices on dehydrator trays.
    • Set the dehydrator to 125-135°F (52-57°C) and dry for 8-12 hours, or until completely dry and leathery.
  3. Store:
    • Store the dried tangerine slices in airtight containers in a cool, dark place.

These methods can help you keep tangerines fresh and enjoy them year-round.
