Ingredients:
For the Pie Crust:
- 1 ¼ cups all-purpose flour
- 1 tablespoon granulated sugar
- ½ teaspoon salt
- ½ cup cold unsalted butter (cubed)
- 3-4 tablespoons ice-cold water
For the Sweet Potato Filling:
- 2 cups mashed sweet potatoes (about 2-3 medium sweet potatoes)
- 1 cup granulated sugar
- ½ cup unsalted butter (melted)
- 2 large eggs
- ½ cup evaporated milk
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Pinch of salt
Instructions:
Step 1: Prepare the Pie Crust
- In a large bowl, whisk together the flour, sugar, and salt. Add the cold, cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, and mix until the dough begins to come together. Be careful not to overwork the dough.
- Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Once chilled, roll the dough out on a floured surface to fit a 9-inch pie dish. Gently transfer the dough to the pie dish and press it into the edges. Trim any excess and crimp the edges if desired. Set aside in the refrigerator while you prepare the filling.
Step 2: Prepare the Sweet Potatoes
- Preheat the oven to 350°F (175°C).
- Peel the sweet potatoes and cut them into chunks. Boil or steam them until tender, about 20-25 minutes. Drain and mash the sweet potatoes until smooth. Measure out 2 cups of mashed sweet potatoes for the pie filling.
Step 3: Make the Sweet Potato Filling
- In a large bowl, combine the mashed sweet potatoes, sugar, and melted butter. Mix until well combined.
- Beat the eggs in a separate small bowl, then add them to the sweet potato mixture, followed by the evaporated milk, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Stir until the filling is smooth and well blended.
- Pour the sweet potato filling into the prepared pie crust.
Step 4: Bake the Pie
- Bake the pie in the preheated oven for 50-60 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.
- Let the pie cool completely on a wire rack before serving. Serve with whipped cream if desired.
- Serving Suggestions: Enjoy Sweet Potato Pie on its own or with a dollop of whipped cream. It’s also fantastic with a scoop of vanilla ice cream on the side!
