spinach stuffed pastry

Ingredients:

  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 package (17.3 ounces) frozen puff pastry sheets, thawed
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare Spinach Filling: In a large mixing bowl, combine the spinach, ricotta cheese, Parmesan cheese, mozzarella cheese, onion, garlic, 1 beaten egg, salt, pepper, and nutmeg. Mix well until all ingredients are thoroughly combined.
  3. Prepare Puff Pastry: On a lightly floured surface, unfold one sheet of puff pastry. Roll it out slightly to smooth any creases. Cut the pastry into 4 equal squares.
  4. Fill Pastry: Place about 2 tablespoons of the spinach mixture in the center of each pastry square. Fold each square over to form a triangle, pressing the edges together to seal. You can use a fork to crimp the edges for a decorative touch.
  5. Egg Wash: Brush the tops of the pastries with the beaten egg wash. This will give them a nice golden color when baked.
  6. Bake: Place the filled pastries on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes or until the pastries are golden brown and puffed up.
  7. Cool and Serve: Allow the pastries to cool slightly on the baking sheet before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
