- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese

- 1 egg, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 package (17.3 ounces) frozen puff pastry sheets, thawed
- 1 egg, beaten (for egg wash)
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Prepare Spinach Filling: In a large mixing bowl, combine the spinach, ricotta cheese, Parmesan cheese, mozzarella cheese, onion, garlic, 1 beaten egg, salt, pepper, and nutmeg. Mix well until all ingredients are thoroughly combined.
- Prepare Puff Pastry: On a lightly floured surface, unfold one sheet of puff pastry. Roll it out slightly to smooth any creases. Cut the pastry into 4 equal squares.
- Fill Pastry: Place about 2 tablespoons of the spinach mixture in the center of each pastry square. Fold each square over to form a triangle, pressing the edges together to seal. You can use a fork to crimp the edges for a decorative touch.
- Egg Wash: Brush the tops of the pastries with the beaten egg wash. This will give them a nice golden color when baked.
- Bake: Place the filled pastries on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes or until the pastries are golden brown and puffed up.
- Cool and Serve: Allow the pastries to cool slightly on the baking sheet before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
