This Lemon Lush Dessert is a delightful, refreshing treat that perfectly combines a crisp graham cracker crust with a creamy, tangy lemon filling. Ingredients:

  • For the crust:
    • 1 ½ cups crushed graham crackers (about 12-14 crackers)
    • ½ cup granulated sugar
    • ½ cup unsalted butter, melted
  • For the cream cheese layer:
    • 8 oz cream cheese, softened
    • 1 cup powdered sugar
    • 1 cup whipped topping (Cool Whip)
  • For the lemon layer:
    • 1 package (3.4 oz) instant lemon pudding mix
    • 2 cups milk
    • 1 cup whipped topping (Cool Whip)
  • For the topping:
    • 1 cup whipped topping (Cool Whip)
    • Lemon zest or lemon slices for garnish (optional)

Instructions:

  1. Prepare the crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, mix together the crushed graham crackers, granulated sugar, and melted butter until well combined.
    • Press the mixture evenly into the bottom of a 9×13-inch baking dish to form the crust.
    • Bake for 8-10 minutes, then let it cool completely.
  2. Make the cream cheese layer:
    • In a large bowl, beat the softened cream cheese until smooth.
    • Gradually add the powdered sugar, beating until well incorporated.
    • Fold in 1 cup of whipped topping until the mixture is smooth and creamy.
    • Spread this mixture evenly over the cooled graham cracker crust.
  3. Prepare the lemon layer:
    • In a separate bowl, whisk together the instant lemon pudding mix and milk until the mixture starts to thicken.
    • Gently fold in 1 cup of whipped topping until fully combined.
    • Spread the lemon pudding mixture evenly over the cream cheese layer.
  4. Add the topping:
    • Spread the remaining 1 cup of whipped topping evenly over the lemon layer.
    • Garnish with lemon zest or lemon slices if desired.
  5. Chill and serve:
    • Refrigerate the dessert for at least 4 hours, or until set.
    • Cut into squares and serve chilled.
