This Elvis Presley Cake is a heavenly combination of tangy pineapple and rich cream cheese frosting atop a light and fluffy white cake. The warm pineapple mixture seeps into the cake, infusing it with a tropical sweetness that perfectly balances the creamy frosting. Each bite offers a unique texture — from the soft, moist cake to the velvety frosting, with a hint of crunch if you add pecans. It’s the perfect dessert for any occasion, especially for those who adore the sweet, nostalgic flavors that might have pleased the King himself.

Ingredients:

  • 1 box White Cake Mix
  • 8 oz can Crushed Pineapple (with juice)
  • 1 cup Granulated Sugar
  • ½ tsp Vanilla Extract (for pineapple mixture)
  • 8 oz package Cream Cheese, softened
  • ½ cup Butter, softened
  • 4 cups Powdered Sugar
  • ½ tsp Vanilla Extract (for frosting)
  • 1 cup Chopped Pecans (optional)

Instructions:

1. Bake the Cake:

  • Preheat your oven according to the instructions on the cake mix box (usually 350°F or 180°C).
  • Prepare the white cake mix according to the package instructions. Pour the batter into a greased 9×13-inch cake pan.
  • Bake the cake as directed on the box, typically around 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Once done, remove the cake from the oven and let it cool slightly in the pan.

2. Pineapple Topping:

  • While the cake is still warm, prepare the pineapple topping.
  • In a small saucepan, combine the crushed pineapple (including the juice), granulated sugar, and ½ tsp of vanilla extract.
  • Cook the mixture over medium heat, stirring occasionally, until it comes to a boil. Allow it to boil for 1-2 minutes, until the sugar dissolves completely.
  • Poke holes all over the surface of the cake using the back of a wooden spoon or a fork.
  • Pour the hot pineapple mixture evenly over the warm cake, allowing the liquid to soak into the holes. Let the cake cool completely.

3. Cream Cheese Frosting:

  • In a large bowl, beat the softened cream cheese and butter together using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.
  • Gradually add in the powdered sugar, one cup at a time, beating well between each addition until smooth and creamy.
  • Add in the remaining ½ tsp of vanilla extract and mix until fully incorporated.
  • Once the cake has cooled, spread the cream cheese frosting evenly over the top of the pineapple-soaked cake.

4. Optional Garnish:

  • If desired, sprinkle the top of the frosted cake with chopped pecans to add a crunchy, nutty flavor.

5. Chill and Serve:

  • Refrigerate the cake for at least 1-2 hours before serving to allow the flavors to meld together.
