Ingredients:

  • 2 cups shredded zucchini (about 2 medium zucchinis)
  • 1 large egg
  • 1 ½ cups shredded mozzarella cheese, divided
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley or basil for garnish (optional)

Instructions:

1. Prepare the Zucchini

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it.
  • Shred the zucchini using a box grater, then place it in a clean kitchen towel. Squeeze out as much liquid as possible. This step is essential to prevent a soggy base.

2. Make the Dough

  • In a large bowl, combine the shredded zucchini, egg, 1 cup of mozzarella cheese, Parmesan cheese, garlic powder, onion powder, basil, oregano, salt, and pepper. Mix well until the ingredients are evenly incorporated.

3. Shape the Dough

  • Transfer the zucchini mixture onto the prepared baking sheet and spread it out into a rectangular shape about ¼-inch thick, pressing down to make it as even as possible.

4. Bake the Base

  • Bake the zucchini base for 15-20 minutes, or until the edges are golden brown and the center is firm. Remove from the oven.

5. Add Toppings

  • Sprinkle the remaining ½ cup of mozzarella cheese over the baked zucchini crust, spreading it evenly.

6. Broil the Breadsticks

  • Switch the oven to broil mode. Place the zucchini breadsticks under the broiler for 2-3 minutes, or until the cheese is melted and bubbly with golden spots. Keep a close eye to avoid burning.

7. Serve

  • Allow the breadsticks to cool slightly before cutting into strips. Garnish with fresh parsley or basil if desired. Serve with marinara sauce or your favorite dip.
