Bacon Strips and Scrambled Eggs with Frank’s Hot Sauce

Ingredients:

  • 4 slices of thick-cut bacon
  • 3 large eggs
  • 2 tablespoons whole milk (optional, for creamier eggs)
  • 1 tablespoon butter or oil
  • Frank’s Hot Sauce, to taste
  • Salt and pepper, to taste

Instructions:

1. Cook the Bacon:

  • Start by frying the bacon in a large skillet over medium heat. Lay the strips flat in the pan and cook until they reach your preferred crispiness, about 4-6 minutes on each side. For crispier bacon, you may want to press down gently with a spatula to help the fat render.
  • Once the bacon is done, transfer it to a paper towel-lined plate to drain excess grease.

2. Prep the Eggs:

  • While the bacon is cooking, crack the eggs into a bowl and whisk them thoroughly. For creamier scrambled eggs, add 2 tablespoons of whole milk. Season the eggs with a pinch of salt and pepper.
  • Whisk the eggs well until fully combined and slightly frothy.

3. Cook the Scrambled Eggs:

  • Heat a non-stick skillet over medium-low heat and add the butter (or oil, if preferred). Once melted, pour in the eggs.
  • Stir the eggs gently with a spatula, allowing them to cook slowly. You want to stir just enough to keep the eggs moving, but not constantly, as this will result in fluffier scrambled eggs. As they begin to set, fold them in on themselves to form curds.
  • Cook until the eggs are no longer runny but still soft and creamy, about 3-4 minutes. Be careful not to overcook them, as they can become dry.

4. Assemble the Dish:

  • Once the eggs are ready, remove them from the heat and plate them next to the crispy bacon strips.
  • Drizzle Frank’s Hot Sauce over the eggs (and the bacon if you like), adjusting the amount based on your spice preference.

5. Serve:

  • Serve immediately with toast or an extra side of avocado for added creaminess. Enjoy this quick, satisfying breakfast with a hot cup of coffee or juice.
