- 1–2 tablespoons bacon fat (from cooked bacon)
- ½ cup People’s Choice Machaca (or any dried, shredded beef)
- 4 large eggs
- Salt, to taste
- ½ cup shredded cheddar cheese
Instructions:
- Prepare the Bacon:
- Start by frying the bacon in a large skillet over medium heat until it reaches your desired crispness, about 5-7 minutes. Remove the bacon and place it on a plate lined with paper towels to drain.
- Carefully reserve about 1–2 tablespoons of the bacon fat in the skillet; this will be used to cook the eggs and machaca, adding depth of flavor to the tacos.
- Cook the Machaca:
- With the bacon fat still in the skillet, add the People’s Choice Machaca. Sauté for 2-3 minutes until it’s heated through and slightly crispy. This will release more of its savory flavors, creating a satisfying base for the breakfast tacos. Once ready, transfer it to a plate and set aside.
- Scramble the Eggs:
- Crack the eggs into a bowl, add a pinch of salt, and whisk until well-combined. Pour the eggs into the same skillet, keeping it at medium heat.
