Ingredients:
- 1 lb ground turkey or chicken
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup brown rice, uncooked
- 2 cups chicken broth (low-sodium)
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
- Fresh cilantro, chopped (for garnish)
- 6-8 wide-mouth quart jars
Instructions:
- Cook the Ground Meat:
- In a large skillet, cook the ground turkey or chicken over medium heat until fully cooked, breaking it into crumbles as it cooks. Drain any excess fat.
- Add Aromatics:
- Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
- Mix in Beans, Corn, and Tomatoes:
- Add the black beans, corn, and diced tomatoes (with their juice) to the skillet. Stir to combine.
- Season and Simmer:
- Stir in the chili powder, cumin, paprika, oregano, salt, and pepper. Let the mixture simmer for about 5 minutes to blend the flavors.
- Prepare the Jars:
- In each quart jar, layer 2-3 tablespoons of uncooked brown rice at the bottom.
- Add the Casserole Mixture:
- Spoon the meat and vegetable mixture over the rice in each jar, filling them evenly.
- Add Broth:
- Pour chicken broth into each jar until the contents are just covered. Leave about 1 inch of headspace at the top.
